Hello! Let me introduce myself.

About Me

I was born on the Caribbean island of Trinidad and Tobago, where many of our dishes consist of flour, I grew up in a home where baking and cooking were everything, my mother baked bread, cakes, pastries, cookies, roti, pizza, you name it and she would make it, especially during Christmas or other holidays, celebrations or family celebrations. My mother taught me to cook and bake and I took all those practices to my own home as an adult, little did I know.

My Journey

My struggles began at the age of six years old when I started to experience the most debilitating headaches. Doctors were never able to explain to my parents why I was having these headaches. The headaches continued into my adult life. When I was nineteen I developed intermittent episodes of diarrhea, constipation, and bloating stomach. From then onward, over the years I experienced added symptoms of nausea, vomiting, bleeding intestines, and bruised intestines. brain fog, inflamed intestines, bleeding small intestines and rheumatoid arthritis

My Diagnosis

Eventually, I was diagnosed with Irritable Bowel Syndrome (IBS) and later on Gluten Sensitivity (GS). I also had to come off milk as I was sensitive to lactose.

I was placed on a boiled food diet for healing, which consisted of everything boiled no seasonings, no oils no spices no gluten. Months later I started a gluten-free diet with everything on the food pyramid, but I was not allowed to have anything processed, my diet also consisted of fermented foods and drinks all homemade, lots of herbs, micro and macronutrients, vitamins and minerals.

My Benefits

After going completely gluten-free my health improved for the better all of my symptoms went away with time, I had more energy and I finally felt free, I started exercising and life is good.

I tried going back to eating bread after I got well,( I craved bread) but it didn’t work out, I eventually became disciplined and continued on my journey.

What I Learned After Going Gluten-Free

I had to do some research, I read books, read medical research, and medical sites, asked questions at the doctor’s office and I learned that in order to continue with a gluten-free diet, I must substitute what vitamins, minerals, and nutrients I will be missing from the bread and so I put all of that into play and over the years, It wasn’t an easy task always finding the items I needed to make my meals, but as time went on I became adept and patient at making my own gluten-free bread cakes, pastries, and drinks.

I am hoping my experience and resources of my blog Let Go Of Gluten will be able to assist anyone who needs assistance in their own journey of a gluten-free life.
